Rustic Bread with Wheat Flour 375g

Freselle (sometimes called friselle) a traditional southern Italian rustic bread. They are baked, cut in half horizontally, and baked again to become hard and crunchy.

The Ricciardi wholemeal version features the finest ingredients and has been crafted to meet the highest standards, made with wholemeal flour.

Before eating, the freselle are soaked briefly in water to soften them slightly, they should only be soaked for a few seconds, typically 5 to 10 seconds, just enough to soften them slightly without making them soggy. The aim is for the bread to be softened on the surface while retaining some of its original crunch in the center.

Here is the general method for preparing freselle:

  1. Fill a bowl with cold water. Originally, sea water was used.
  2. Briefly dip one side of a fresella in the water, porous-side down.
  3. Immediately remove it from the water.
  4. Season and eat immediately. If you let the water and toppings sit for a few minutes, the freselle will soften even more.

Tip: A good way to tell if it’s softened properly is to press it gently; you want it to feel yielding but not mushy.
